E・HERO Stratos : Miss the timing
Sorry, but I am not good with timings... so need some enlightment here
If I summon E-hero stratos from RFG zone... using leviair, with detaching sangan.
Will stratos miss the timing ?

the safest way is to detach tour guide
but i think stratos still have it's eff even if you detach sangan from leviair

This would be the same like tribute summoning Mobius using Sangan, Sangan activates, then you can choose to activate Mobius' optional trigger effect. In your case
Leviar detaches Sangan, Special Summon Stratos. Sangan activates (chain link 1), then you can choose to activate Stratos (chain link 2). No timing missed.

However, also note that you search for your E-Hero BEFORE you search for sangan (if you ever in a tournament or anything)

Can startos use its effect to destroy opp gravity bind ? (There is another hero on field already)

Definitely miss the timing, because Stratos was summonned in the middle of a Chain. Last thing happens isn't Stratos's summoning.
For the situation at the 1st post: Sangan detached as Xyz material DOESN'T have effect, so how can Sangan be chain link 1. Stratos's eff is the only effect that was activated after Leviair's eff resolved.

If I use call of haunted/skyscrapper 2.... SS stratos
or even just normal summon stratos. And activating its effect...
then opp use BTH
then I chain super poly
How this goes in order ?

I will explain the Chain to you:
Chain Link 1: Stratos' effect
Chain Link 2: BTH
Chain Link 3: Super Poly
Chain resolves backward
Super Poly resolves: you send Stratos and the other material monster to grave to Fusion Summon.
BTH resolves: BTH lost its target (and target here doesn't means like "this card targets) and will resolves without effect.
Stratos' effect resolves: You will search or destroy S/T card(s) on the field depends on the effect you choose at activation.
That's mean no miss timing. And you really should learn about what is missing the timing kangtuji!

A good way to think of miss the timing is: Stardust vs 2 Mandatory GB effects or Stardust vs Dark World Chain

If you were to somehow summon 2 Stratos at the exact same time, both would activate in a chain because nothing has resolved after their summon. If you were to chain Call of the Haunted to a card effect and Summon Stratos, then Stratos would come out, then the other card would resolve. Now something has resolved after Stratos's summon, so it misses timing.
Another way to put it is activations of an effect is not an action on the field, just a declaration.

So if I chain any card effect that would remove or detroy (Heavy Storm, Ryko, Lyla, Brionac, Caius, MST, etc ?) call of the haunted.... stratos will miss the timing ?

If you activate Stratos eff than he can't miss timing no matter what happens afterwards.
Example:
Summon Stratos
Opponent chains BTH
Stratos won't miss timing
The only time when Stratos would miss timing is when he is summoned in the middle of a resolving chain.
Example. Opponent plays MST on your Call Of The Haunted.
You chain your Call Of The Haunted targeting Stratos in your grave.
RESOLVING
Stratos is summoned
MST Destroys COTH
Stratos will miss timing cause the last thing to happen in the chain he was summoned was not his summon.
Example:
Summon Stratos
Opponent chains BTH
Stratos won't miss timing
